“Hamanasi Caye Lime Pie”

Our home-made Caye Lime pie is one of our guests favorite desserts, and we are happy to share the recipe with you!

HAMANASI’S CAYE LIME PIE

Ingredients:

Mix together all at once:

  • 2 cans                        Condensed Milk
  • 2                                    Egg Yolks
  • 1 tsp.                           Vanilla Extract
  • 1 c.                                Lime Juice

 Method:

  • Mix all of the above ingredients together with a paddle and pour into a graham cracker pie shell and bake for about 25 minutes on 350°F. 
  • The pie should be more firm than lose when shaken to check for doneness. 
  • Chill for 2 hours in the freezer to firm up pie prior to serving.

 

Garnish by caramelizing thinly sliced Lime wheels with White Sugar in a skillet.  Cook until the sugar and lime becomes dark.  Remove from heat and allow to cool down before using.  Slice generous portions of the pie and place the lime on top.

The traditional Hamanasi Cookie Buffet was a slam with guest sating their sweet pallets with the popular Ginger Bread Men, Almond Bars, Peanut Butter Blossoms, Pineapple Filled Cut-outs, Sugar Cookies, Lime Drop Cookies, Chocolate Chews and last but not least our Ultimate Chocolate Chip Cookies.   To quench their thirst we had Shiraz Punch and the not to be forgotten our Hamanasi Eggnog.

“We recently traveled to Belize, a country rich in wildlife with a strong commitment towards conservation. Belize is also culturally vibrant and diverse, and the Belizeans are extremely warm and welcoming hosts.

We first traveled to the Cockscomb Basin Wildlife Sanctuary, which is the world’s largest protected environment (200 sq. mi.) for jaguars. A fellow traveler spotted and photographed a gorgeous female jaguar!!! We did, however, view many species of birds with the assistance of our excellent guide, Golden, a native of the nearby town of Hopkins. Among our sightings was a wood stork and a violet saber-wing hummingbird.

We also traveled to Monkey River and Monkey Bay, where we saw crocodiles, green iguanas, howler monkeys, and manatees!!! I was the only one who saw an elusive blue morpho butterfly which served as a reminder to conserve our wild environments.

We were the guests of the Hamanasi Resort which is strongly committed to conservation. There they have reduced beach erosion by maintaining the coastal forest which is threatened by development. It was here among the coconut palms and sea grapes where I did my plein air paintings.

We toured nearby villages and developed an deeper understanding of Belize. We also were enjoyed a dance and drumming performance given by a group from Dangriga. They were outstanding!!! I am currently researching Belizean folklore as subjects for studio painting.

Nature’s Surprises

Sometimes Mother Nature surprises you with an unexpected encounter that is beautiful and thrilling!  These dolphins kept divers entertained throughout their dive yesterday as they searched for whale sharks.  No whale shark sightings for the day, but happy divers for the experience!

In April of 2006 travelers Karen Catchpole (writer) and Eric Mohl (photographer) left their jobs and apartment in New York City and embarked on the Trans-Americas Journey, a five year, 200,000 mile cross-country and cross-continental drive.

The overland journey is an exploration of the byways and back roads of North America, Central America and South America and a search for the people, places and things that make every place special. A true Pan-American road trip. In December of 2008 the Trans-Americas Journey wrapped up its time in the US and Canada and crossed the border into Mexico where Karen and Eric will spend the coming months exploring, shooting and writing before venturing further south through Latin America until they run out of road.

They have now found their way to Hamanasi!  Welcome Karen and Eric… and enjoy the “Belizean Passion”!
