All breads served with dinner at Hamanasi are delicious, but our manatee bread is far and beyond a guest favorite. Savory golden bread is wrapped around crisp bacon and melted. This delicious, delectable bread is nearly a meal on its own — but you will want to save room for the main course! To make this mouth-watering bread a home, try the recipe below.

Standard bread dough

Ingredients:

  • 5 lb Flour
  • ¼ cup Brown Sugar
  • 2 Tbsp. Salt
  • 3 Tbsp. Dry Yeast
  • ¼ lb Shortening
  • ¼ lb Butter
  • 4 cups Milk
  • 4 cups Water

Directions:

  1. Combine all dry ingredients to a large mixing bowl, then add butter and shortening. Using the dough hook on your electric mixer, start kneading bread while adding the liquids.  Mix well until the desired consistency is reached. The dough should feel soft and smooth. Leave to raise in a warm spot.

Filling

Ingredients:

  • Olive Oil
  • Crisp fried bacon, cut in pieces
  • Diced mozzarella cheese
  • Fresh or jarred basil pesto
  • Coarse sea salt
  • Thyme sprigs

Directions:

  1. When the dough has doubled in size, knead it again and roll it out in a rectangle.
  2. Paint olive oil on one side of the dough and flip over.  This will make it so the bread does not stick to the pan.
  3. Begin adding fillings by spreading the fresh basil pesto so that there is a thin layer covering the entire rectangle.
  4. Then, sprinkle a healthy amount of bacon bits over the dough.
  5. After that, scatter the diced mozzarella cheese, coarse sea salt and thyme sprigs so it distributes evenly over the dough.
  6. Finally, roll all of the ingredients inside the dough and bake in the oven at 350 degrees for 45 minutes. Cut to your liking and serve hot.
