When looking out to sea from Hamanasi’s beach you can see small green islands dotting the horizon.  Many of those islands comprise mangroves, a critical tree species that lives in shallow waters providing a safe home to many juvenile marine species while preventing erosion. 

Singanga’s Green Island original drink special was created by bartender Delvin Tulcey, who has been a part of the Hamanasi family for over 8 years.   He was inspired to create a drink that pays homage to Belize’s mangroves, hence the Green Island cocktail. 

This is a refreshing drink ideal for the health conscious containing few calories and no added sugar.

Ingredients

  • 1 sprig mint or 4-5 leaves
  • 1 oz Belizean White Travelers Rum (or similar) 
  • 1 oz gin
  • 4 oz cucumber juice
  • ¾ oz fresh squeezed lime (about one lime)
  • soda water- to taste

Directions: 

Step 1: Preparations

  • Make cucumber juice by blending 1 cup water with one cucumber, then strain.

Step 2: Mix the cocktail

  • Muddle mint in a glass 
  • Add ice 
  • Pour in rum and gin 
  • Add cucumber and lime juice
  • Top off with soda water
  • Garnish and enjoy
