Rumpopo is a Belizean twist on Eggnog.  Several versions of this drink with similar ingredients are found within Central America. Our neighbors to the north have Rompope, which derives from the Spanish drink rompon in Mexico. It is thought this is where this style of drink originates. We may be a bit biased, but we fell Belizean Rumpopo is the best! No matter where you are in Central America this style of beverage is popular during the holidays and is meant to be shared with family and friends. 

Whether you plan to make a batch for your family or gift it to your friends and neighbors, Rumpopo is a Belizean holiday essential!

Yield: 1 gallon

Ingredients

  • 5 servings of 480 ml media crema (heavy cream)
  • 5 cans of 389 ml evaporated milk
  • 5 eggs
  • Pinch of freshly grated nutmeg (powdered nutmeg works, too!)
  • Dash of cinnamon powder
  • 2 cups of brown sugar
  • 1 tablespoon of vanilla extract
  • Optional: 1/4 cup dark rum or 2 oz per serving (we like Belizean dark 3 Barrel Rum.)  
  • Cinnamon sticks for garnish

Directions

  1. Combine cream and evaporated milk in a large pot on medium to low heat.
  2. Add cinnamon, vanilla, and nutmeg.  Stir the mixture for 5 minutes, ensuring the mixture does not come to a boil.  Reduce heat if needed. 
  3. In another container, mix 5 eggs, add 2 cups of brown sugar. Whip vigorously until fluffy.
  4. Add the whipped sugar with eggs in the milk. Gently fold into each other and turn the heat up slightly to medium. Continuously stir for 5 minutes then take off the heat. 
  5. After your mixture has cooled off set some aside to chill in the refrigerator as a non alcoholic Rumpopo or add your rum. You may also choose to add the rum per serving, in which case it is 2 oz per serving, or to taste. 
  6. Once your Rumpopo has chilled in the fridge, it is ready to enjoy! Enjoy cold or warm and garnish with cinnamon sticks.

Ways to Enjoy

There are so many ways to enjoy Rumpopo and everyone has a different preference!  Try this tasty treat straight out of the fridge or on the rocks after dinner while chatting with family or friends.  You can enjoy it with or without rum. Another way to enjoy this drink is freshly warmed on the stove.  Give it a try by pouring a generous amount of Rumpopo into a sauce pan and heating it up on low heat.  Be sure not to boil it as it may affect the consistency.  Finally, our favorite way to enjoy this holiday drink is on the beach or poolside at Hamanasi with the company of the ones you love.
