Having a refreshing tropical drink while lounging on the beach or poolside, does not necessarily mean that there is alcohol in the mix!  Whether you abstain from alcohol as a lifestyle choice, are on a babymoon or are just cutting back, the bartenders at Hamanasi’s Singanga Bar & Restaurant have you covered!   

We’ve recently added several mocktails to our bar menu, giving you a choice of unique and tasty options.  Here are a few tantalizing mocktail recipes that you can try from the comfort of your home while thinking of us all at Hamanasi! 

Beach Fever

Lemongrass, also locally known as fever grass, is commonly used in Belize to make tea, season meats, and create delicious mocktails. Not only does lemongrass have a pungent and earthy flavor, but it is believed to be an immune booster. The Singanga Beach Fever mocktail recipe combines the flavors of fresh cinnamon, zesty lime, and robust lemongrass for a unique and refreshing tropical drink. 

Ingredients: 

5 oz Lemongrass Tea:

  • 5 blades of fresh lemongrass
  • 3 cups of water

1.5 oz Cinnamon Syrup:

  • 5 cinnamon sticks
  • 1.5 cups of water
  • 1 cup sugar 

.5 oz Lime Juice

1) Start with freshly brewing the lemongrass tea.  Place 3 cups of water in a saucepan and bring it to a boil.  Add the lemongrass, reduce to medium heat and let brew.  After 10 minutes, turn off the heat, cool to room temperature, then remove the lemongrass.  Finally, place tea* in a refridgerator to chill until ready to mix into your mocktail. 

*Please note, you may have extra lemongrass tea, try adding honey to this tea and enjoy! 

2) Second, you will need to create your delicious cinnamon syrup.  Start with placing 1.5 cups of water in a saucepan over medium to high heat.  Add the cinnamon sticks and 1 cup of sugar, stirring frequently until the sugar dissolves. Bring to a simmer while stirring occasionally.  After 7 minutes, remove from heat and cool to room temperature.

3) Next, you will need to freshly squeeze about 2 limes, depending on size, for 2 oz juice.  You may also choose to use bottled lime juice, though fresh is preferred.

4) Finally it is time to mix your mocktail! Start with adding ice into a 12 oz glass. Begin creating your mocktail by adding the lemongrass grass tea, cinnamon syrup, followed by the freshly squeezed lime juice. Gently stir and garnish with a lemongrass sprig and lime wedge.  Enjoy! 

Sandy Toes

Nothing shouts, ‘tropical drink’ more than the combination of fresh citrus juice, pineapple and coconut cream!  If you close your eyes and take a sip of Singanga’s Sandy Ties mocktail, you’ll swear you are sitting on the beach at Hamanasi with your toes in the sand! Ingredients: 

1 teaspoon of cinnamon

1 teaspoon of sugar

2 cups ice

2 oz Pineapple Juice.  Fresh is always best, but in a pinch you can use canned or bottled pineapple juice. 

2 oz Orange Juice.  Freshly squeeze 1-2 oranges (depending on size) or use bottled orange juice. 

3 large Chunks of Pineapple

1.5 oz Coconut Cream

0.5 oz Lime Juice. Freshly squeezed juice from ~ 1 lime.

1) Mix the cinnamon and sugar in a shallow bowl or plate.  Prepare a margarita glass by taking a piece of pineapple and rubbing the rim of your glass. Then dip the rim of the glass into the cinnamon and sugar mixture. 

2) Blend until smooth all remaining ingredients in a blender. 

3) Pour your delicious blended tropical drink into the Margarita glass and garnish with a pineapple wedge.  Begin your time traveling adventure to the sandy beaches of Hamanasi! 

Mangu Dream

‘Mangu’ is the Garifuna word for mango.  In Hopkins, Belize we are blessed with an abundance of fresh and juicy “mangus”.  Mango trees line the village streets and are so abundant during mango season that the fruit drops to the ground. When not eaten directly, mango is an ingredient in many recipes from fruit salsas, cakes, ice cream, to BBQ sauces. For a taste of Hopkins, try the Mangu Dream mocktail.

Ingredients: 

1 oz Orange Rosemary Syrup

  • 1.5 cups water
  • Orange peel of 2 oranges
  • 1 cup sugar
  • 1 fresh rosemary twig

2 oz Mango Puree

5 Guava Chunks

2 cups ice

1) The first step to making this tasty treat is to mix your Orange Rosemary Syrup.  Start with pouring 1.5 cups of water in a saucepan over medium/high heat.  Place the peel of 2 washed oranges, a fresh rosemary twig and 1 cup of sugar into the saucepan.  Stir until sugar dissolves.  Reduce heat to medium and simmer for 5 minutes, stirring occasionally.  Be careful not to simmer too long as the syrup may become too bitter with the orange peel. 

2) Complete your Orange Rosemary Syrup by straining out the peel and rosemary and allow it to cool to room temperature.

3) Next, prepare the mango puree.  If you are making the puree from scratch, remove the skin and seed from one large mango and blend until smooth.  You may also choose to purchase mango puree.  

4) Once your mango puree is ready, place all ingredients in a blender with 2 cups of ice and blend until smooth. 

5) Pour your tasty treat into a hurricane glass, garnish with a guava wheel and mint sprig. Enjoy!

Chili Watermelonito

Singanga’s Chili Watermelonito is no typical ‘safe’ mocktail.  It is a unique drink that is a thrill to make and taste!  Combining the sweet and juicy flavors of watermelon with refreshing mint, tangy lime, and zesty chili will have your tastebuds dancing. This bold mocktail was created with the adventurer in mind.  We wanted to spice it up a bit and create an exciting, energetic experience for your tastebuds. Ingredients: 

1 oz Simple Syrup

  • 1 cup sugar
  • 1 cup water

1 teaspoon salt

¼ teaspoon cayenne pepper

1 teaspoon ground black pepper

1 teaspoon paprika

1 lime wedge

10 Mint Leaves

1 large chunk of watermelon

½ Chile de Arbol

1 oz Lime Juice

3 oz Watermelon Juice

Ice

Soda Water

Splash of Soda Water

1) First, prepare a simple syrup from scratch. Place sugar and water into a saucepan on medium heat. Heat and stir until the sugar is dissolved. Remove from heat and allow the syrup to cool to room temperature.

2) Mix salt, cayenne pepper, black pepper and paprika in a shallow bowl or plate.  Rub lime around the rim of a 12 oz Collins glass and dip the rim into the spice mixture. 

3) Then place the mint, watermelon chunk and ½ of a Chili de Arbol in the Collins glass.  Muddle ingredients being careful not to smudge the rimmed glass. 

4) Next, add simple syrup, lime juice, watermelon juice, and ice.  Give the mixture a gentle stir and top it off with soda water. 

5) Finally garnish with a mint twig and a Chili de Arbol. Enjoy!
